Challenge
Strong weekends, empty Tuesday to Thursday. No reservation data, no way to reach past guests.
Solution
Repositioned the mid-week offer around a short set menu, launched local Meta and Google campaigns, moved bookings onto a reservation platform with guest data.
Result
Mid-week covers climbing month over month, a cost per reservation the owner can read on the P&L, and a guest list that finally belongs to the venue.

Challenge
The bar was treated as a hotel amenity, invisible to the city. Low walk-in traffic and a drinks list nobody could describe.
Solution
Gave the bar its own identity and menu, ran a creator and local-partnership programme, trained the team on the new list and upsells.
Result
A rising share of revenue from non-guests, a higher average check on the new list, and a review rating that moved with it.

Pre-opening concept with a broad menu, unclear price point and no launch plan.
Solution
Cut the menu by a third and costed every recipe, built the brand and packaging, ran staff dry runs and a two-week launch campaign.
Result
A busy opening week, a food gross margin protected from day one, and break-even reached ahead of the original plan.
